Similar to Blast Chillers, Blast Freezers are used in commercial kitchens to cool food rapidly to very low temperatures by circulating very cold air over it. Blast Freezing is the process whereby produce at or above room temperature is brought down to a safe storage temperature and then frozen. The process means that food products can be transferred to frozen storage quickly, without transferring heat to other products. This minimises the risk of both bacterial growth and damage to other products.
